Brix = Actual sugar content (this does not change)
Taste = What our tongue and brain perceive
- The sugar remains the same
- But our perception changes
Why do hot things taste less sweet
Effect of Taste Buds
When something is hot:
- Our taste buds become less sensitive
- Especially to sweetness
So, hot juice feels less sweet
Effect of Aroma
Sweetness is not only from sugar, but also from aroma
At higher temperatures:
- Some aromas evaporate
- Flavor feels weaker
Result: the drink tastes bland
Brain Perception
Cold items feel more “refreshing & sweet” to the brain
Hot items don’t create the same effect
Simple Example
Think about this:
- A cold drink → tastes very sweet
- The same drink when warm → tastes less sweet
Even though the sugar content is the same

- Brix (sugar content) does not change
- Temperature changes taste perception
- Higher temperature → less sweetness perceived
- Lower temperature → more sweetness perceived

Always check both Brix and taste at standard temperature (~20°C)
